February Brewer’s Corner

This week in brewhouse news! We came back strong (from that horrible cold streak last week) by brewing our imperial stout Smash Tun and nitro milk stout After Party. Smash Tun will be put into freshly dumped Buffalo Trace barrels to get barrel aging started for our usual fall/winter release. After Party will be heading back to taps in late March.

Over in the cellar we dry-hopped our current batches of Alterior Motive IPA and Galaxy & the 7 Seas Hoppy Red Ale. Our NEIPA Hell Hazed Over and two variants were kegged up out of our pilot fermenters. Those are on tap now (while quantities last) and we can’t wait for you to try them out. Next up for our pilot experiments, we are planning on combining some Smash Tun and After Party with some interesting ingredients, and we can’t wait to see how they turn out. Stay tuned there.

In packaging news, we bottled a small run of Nilla Priest this week, which is a blend of regular Smash Tun, Reverend Brown, and barrel-aged Alto Porto w/vanilla added. Look for this one coming out real soon. Also packaged this week were Inside Voices and Outside Voices, which will be out next week!

Inside Voices is an unfiltered mild ale that utilizes Red Wheat and Munich malts to deliver a bakery-fresh aroma and character. We add a modest amount of stone-fruity Rakau hops near the end of the boil that works well with the subtle fruitiness of our English yeast strain. This ale pours a hazy light orange hue, with a stark white head. Very well mannered for its ABV, this beer clocks in at 7% ABV.

Outside Voices is a blend of Inside Voices and our Fearless Rye Wine, which was aged in premium rye-whiskey barrels. When mixed together the result is a blending of soft characteristics like breads and raisins, with big flavors like whiskey and rye. This beer pours an amber color, with a soft white head. It’s definitely a sipper, blending out to around 11% ABV.
