As Head Cellarman Alfred’s focus is maintaining and aiding the integrity of the beer during the fermentation process. This includes but is not limited to secondary additions, yeast maintenance, clarification and carbonic processes. A fan of all things creative, Alfred can also be seen blending barrels and crafting small batches for the ‘Alteration’ Program.
Alfred has over 10 years experience in the beverage production industry, including over 6 years in craft beer production. After working for a regional brewery for over 3 years, Alfred resolved that Alter’s vision ran parallel with his and joined the team in the first half of 2016.
When out of the office Alfred can be found foraging the Chicagoland area in an attempt to find the best ramen. Joke’s on him, as an accomplished chef himself the best ramen is only 4 hours in a pressure cooker away at any time. A fan of big butts, Alfred oft enjoys an Acid Kuba Kuba cigar and a whiskey neat. On the second week of what was the coldest Black History Month to date, Alfred proclaimed that Malort was “not that bad,” officially debunking the myth that you either love or hate it.
